Three Bean Salad

This recipe is a variation on the old theme and it even has Coke in its sauce …
You need: (for 6 portions)
• 1 x 400 g tin butter beans, drained and rinsed
• 1 x 400 g tin chickpeas, drained and rinsed
• 1 x 400 g tin kidney beans, drained and rinsed
For the sauce you need:
• 1 tablespoon oil
• 1 onion, grated
• 1 red sweet pepper, finely sliced
• 1 teaspoon cumin
• 1 teaspoon curry powder
• ½ teaspoon turmeric
• ½ cup Coca-Cola
• ¼ cup balsamic vinegar
• ¼ teaspoon salt
• ¼ teaspoon freshly ground black pepper
• Mix all the beans in a beautiful, large dish.
• Heat the oil and fry the onion in it until light brown.
• Add the sweet pepper and stir for about 2 minutes (the sweet pepper has to retain its colour and shouldn’t be soggy).
• Add the cumin, curry powder and turmeric and stir it through the ingredients for a minute or two.
• Add a tablespoon of the Coke and let the liquid first cook off before you add another tablespoon. (A sticky layer forms at the bottom of the pan which gives the sauce a good taste.)
• Add the rest of the cool drink and stir another few minutes.
• Remove from the heat and add the balsamic vinegar, salt and black pepper.
• Pour the ingredients over the beans and serve.
Hint: This salad tastes even better once it has been in the fridge for a while. Therefore prepare it the previous day.
