Cold Chicken Salad

You need (for 4 servings):

  • 3 cups cooked leftover chicken, cubed or flaked
  • 1 cup dried cranberries
  • ¼ cup onion, finely chopped (preferably use red onions in a salad – it’s sweeter)
  • 1 apple (any kind), peeled, pitted and cubed
  • ½ cup pecan nuts, chopped
  • 1 cup mayonnaise
  • 1 teaspoon lemon juice
  • ½ teaspoon curry powder
  • ¼ teaspoon salt
  • freshly ground black pepper
  • ½ lettuce, washed and dried with paper towels

 

Get cracking:

  • One … Mix the chicken, cranberries, onion, apple and nuts in a bowl.
  • Two … Mix the mayonnaise, lemon juice, curry powder, salt and pepper in a separate bowl. 
  • Three. Mix the sauce and chicken mixture and arrange it on top of the lettuce on a plate.

Variation:

  • Replace the cranberries with cubes of pineapple, soft dried apricots or any other fruit of your choice.
