Cold Chicken Salad

Cold Chicken Salad
You need (for 4 servings):
- 3 cups cooked leftover chicken, cubed or flaked
- 1 cup dried cranberries
- ¼ cup onion, finely chopped (preferably use red onions in a salad – it’s sweeter)
- 1 apple (any kind), peeled, pitted and cubed
- ½ cup pecan nuts, chopped
- 1 cup mayonnaise
- 1 teaspoon lemon juice
- ½ teaspoon curry powder
- ¼ teaspoon salt
- freshly ground black pepper
- ½ lettuce, washed and dried with paper towels
Get cracking:
- One … Mix the chicken, cranberries, onion, apple and nuts in a bowl.
- Two … Mix the mayonnaise, lemon juice, curry powder, salt and pepper in a separate bowl.
- Three. Mix the sauce and chicken mixture and arrange it on top of the lettuce on a plate.
Variation:
- Replace the cranberries with cubes of pineapple, soft dried apricots or any other fruit of your choice.
