Chicken Potjie

Cheap-cheap chicken
You need (for 4 servings):
- 2 onions, peeled and chopped
- 2 tablespoons oil
- 1 whole chicken, cut into portions (or 8 chicken breasts or thighs).
You can debone it, or remove the skin if you’re worried about your weight - 2 cups boiling water
- 5 sweet potatoes, peeled and thickly sliced
- 5 carrots, peeled and thickly sliced
- 2 potatoes, peeled and thickly sliced
- 1 cup dry white wine
- 2 teaspoons soy sauce
- 50 g tomato purée
- 2 tablespoons brown sugar
- salt and pepper to taste
Get cracking:
- Let it tan. Heat the oil in a potjie and fry the onions until soft.
Add the chicken and fry until brown.
- For a little bit of vitamins.
Pour in a cup of the water and stir through to ensure there’s liquid in the bottom of the potjie.
Mix the vegetables and pack it on top of the chicken.
- A whole mix-up. Mix the rest of the water and the white wine and soy sauce with the tomato purée and seasoning, and pour it over the vegetables.
Put the lid on and let the potjie simmer for an hour or two over low heat until it’s soft and fragrant.
- Just a little peek. Check the potjie often to make sure that it doesn’t dry out and add a little water if necessary.
