Braai sauce
What, pap without sous?
We all have our favourite braai sauce to spice up the chops and pap. This one is easy and fail-safe.
You need:
(for 6-8 people)
- 2 tablespoons oil
- 2 onions, chopped
- 2 cloves garlic, chopped
- 2 tomatoes, peeled and chopped
- 1 apple, peeled and grated (optional)
- 1 x 50 g packet tomato purée
- ½ cup pitted sultanas
- ½ cup dry white wine
- 1 beef stock cube, dissolved in 1 cup boiling water
- ¼ cup chutney
- 2 tablespoons Worcestershire sauce
- 2 tablespoons paprika
- 1 tablespoon apricot jam
- salt and pepper to taste (taste first before you season)
Simmer it all together. Heat the oil and fry the onions and garlic until golden. Add the tomatoes and stir for a minute or two. Add the rest of the ingredients and simmer over very low heat for about half an hour. Taste whether the stock cube has added sufficient salt before adding extra salt.
