Birthday potatoes

This salad is so easy you can make it every day, and so tasty you can easily put it on your dearly beloved’s birthday menu.
You need (for 4 servings):
- 6 boiled potatoes, peeled and thinly sliced
For the sauce:
- ½ teaspoon mustard powder
- ½ teaspoon salt
- ½ teaspoon white pepper
- ½ cup condensed milk
- 1 egg yolk
- ¼ cup olive oil
- ¼ cup white wine vinegar
- chopped parsley or paprika (optional)
Get saucy. Mix the mustard powder, salt and white pepper and stir it into the condensed milk. Beat the egg yolk with a fork and stir it into the condensed milk, followed by the oil and finally the vinegar. Put in the fridge until the sauce thickens.
Layer it. Stack layers of potatoes in a bowl and pour the salad dressing in between layers. Sprinkle a little parsley or paprika over it for colour.
TIP: You can boil the potatoes and make the salad dressing the day before, but don’t put the two together until just before the meal, otherwise it’ll get watery. This salad is delicious with leg of lamb.
