Avocado salad
If you want to impress that blonde Swedish exchange student you have just picked up outside Khorixas, hide the sausage and rather make this salad.
You need: (for 6 portions)
- 1 avocado, peeled and sliced
- 1 x 425 g tin baby apples with stems, or any other tinned fruit such as mangoes and apricots, drained
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- ¼ teaspoon mustard powder
- salt and black pepper to taste
Get cracking:
- Arrange the avocado and fruit on a plate.
- Mix the olive oil, lemon juice, mustard powder and salt in a cup and pour over the salad.
- Sprinkle with freshly-ground black pepper and serve.
HINT:
- Avocados will keep longer on safari if they are bought before completely ripe.
- If it doesn’t ripen quickly enough to your liking, store it in a brown paper bag to speed up the ripening.
