Avocado salad


If you want to impress that blonde Swedish exchange student you have just picked up outside Khorixas, hide the sausage and rather make this salad.

You need: (for 6 portions)

  • 1 avocado, peeled and sliced
  • 1 x 425 g tin baby apples with stems, or any other tinned fruit such as mangoes and apricots, drained
  • 4 tablespoons olive oil
  • 4 tablespoons lemon juice
  • ¼ teaspoon mustard powder
  • salt and black pepper to taste

Get cracking:

  • Arrange the avocado and fruit on a plate.
  • Mix the olive oil, lemon juice, mustard powder and salt in a cup and pour over the salad.
  • Sprinkle with freshly-ground black pepper and serve.

HINT:

  • Avocados will keep longer on safari if they are bought before completely ripe.
  • If it doesn’t ripen quickly enough to your liking, store it in a brown paper bag to speed up the ripening.

wonderful recipes...... I agree with combo of fruit and veg and not too much meat , esp for lunch stop : delicious. !!
Another BIG advantage , you can carry avos for a week, before the are ripe...exactly what we are looking for, for our guests tours into bundus!
